
Taquitos are a catch-all term for deep-fried tacos, often thin and crispy, and filled with shredded chicken, pulled pork or beef. Taquitos are fun because you can eat half a dozen of them and still have room for dessert — that doesn’t mean they’re not immensely satisfying!
The problem with taquitos is that most people eat the frozen kind, and although tasty, they’re also a bit sad, especially when compared to homemade taquitos. Learn how to make chicken taquitos in an air-fryer and enjoy the real deal.
To make taquitos, you need corn tortillas; the fresher, the better. And we mean it — freshly made tortillas are unbeatable, although many store-bought alternatives are not all that bad.
You’ll also need a filling. You can use shredded chicken, pulled pork, or pulled beef — these are the typical taquito fillings. We’re using shredded rotisserie chicken to ensure the most flavor while making good use of leftovers. Now you know what to make with that roasted bird left behind.
Taquitos are lovely on their own, but they’re naturally dry and can be a bit plain if served without toppings and add-ons. That’s where salsas come in. Make a pico de gallo salsa and top your taquitos with it. We’ll also show you how to make guacamole to round up your Mexican-themed meal.

To make the salsa, combine the tomatoes, onion, cilantro, jalapeño and lime juice. Season with salt to taste.
To make the guacamole, mash the avocados and combine them with the onion, cilantro and lime juice. Keep covered and refrigerated until ready to serve.
For the taquitos, warm the tortillas until malleable and bendy. Alternatively, spray them with cooking oil if they are too dry.
Fill each tortilla with 2-3 tablespoons of shredded rotisserie chicken and roll tightly.
Use toothpicks to keep the taquitos rolled.
Preheat the air fryer to 380°F.
Spray the taquitos with cooking oil and arrange them in the air fryer basket.
Air fry the taquitos for 5 minutes until crispy.
Serve the chicken taquitos with a side of salsa and guacamole.
