
Potstickers, known as Jiaozi and Chinese dumplings, are tender one-biters with meaty fillings and umami-rich flavors. Potstickers, though, unlike other dumplings, are always fried, resulting in a golden treat with a crispy texture.
Potstickers can be boiled, steamed, pan-fried and even served in soup, but the fried versions have the most fans. Who doesn’t love fried goodies? What is the best way to make potstickers? Using an air fryer.
To make potstickers, you need to make the filling first. Ours consists of ground pork, cabbage, garlic, ginger and green onions. We’re using soy sauce and roasted sesame oil for flavor.
For the dough, provided you want to make your potstickers from scratch, you’ll need flour, salt and water — that’s it!
Potstickers are delicious, but you want to dip them in a savory sauce for the wow factor. Combining rice vinegar and soy sauce is typical and results in a tangy and salty sauce that brings forward the potstickers’ flavor. Hot chili sauce is also famous but be careful — it’s often pretty hot!

In a mixing bowl, combine the ground pork, garlic, ginger, green onions, soy sauce, sesame oil and cabbage. Mix well and set aside.
To make the potsticker dough, combine the flour and salt in a bowl. Add hot water while mixing until you get a smooth dough. You might only need to add some of the flour, or you might need to add more if the dough is too sticky.
Cover the mixing bowl with the dough with a kitchen towel and allow it to rest at room temperature for 30-45 minutes.
Divide the dough into 16 small balls and roll them until flat.
Add a tablespoon of pork mixture over each disc, fold them and seal them by pinching the edges.
Preheat the air fryer to 380°F and place the potstickers in the air fryer basket without overcrowding. Work in batches if necessary.
Air fry for 8-10 minutes until the dumplings are slightly golden and the filling is cooked through. When in doubt, consult your appliance’s user manual.
Mix the rice vinegar and soy sauce for the dipping sauce and serve the pork potstickers while still warm.
