Being a baking lover, I’ve used Almond flour in many desserts but I’ve never tried Almond flour with oatmeal until recently and it turns out to be an amazing combo! This almond flour cookie has a warm and spicy taste that is enhanced with lots of chocolate chips.

They’re crispy and chewy, and almonds and ground oats don’t make me feel bad about offering them to the kids as an after-school breakfast.

Almond flour with high moisture content and sweet nutty flavor make baked goods such as cookies, muffins, and pancakes more flavor and texture.

The best thing is that these cookies are super easy to make. All you need is a large wooden bowl and spoon for mixing. It took 20 minutes to cool the dough in the refrigerator, but then you’re ready to bake.

What ingredients you’ll need?

Almond flour: You can use blanched almond flour as well.

Oats: Gluten-free oats should be preferred.

Brown Sugar: It gives a great taste.

White Sugar: You can also add sugar-free substitution.

Baking Powder and Baking Soda: They give rise to the cookies.

Butter: unsalted butter should be used.

Vanilla Extract: It is a must for any good cookie recipe.

Chocolate chip: you can also use a chocolate bar.

Steps to make these appetizing cookies:

Mix all the dry ingredients

Add all the wet ingredients and mix until well combined.

Sprinkle chocolate chips. (If the batter is thick add milk of your choice).

Take out a scoop of dough with the help of a cookie scoop and put them on the baking sheet covered with parchment paper.

Preheat the oven at 350oC and bake the cookies for 10 minutes. Take them out when the edges turn golden brown.

You’ll be blown away after eating this.

These cookies are soft and chewy with flavorful oats and almonds. You can add raisins instead of chocolate chips and that depends on your liking!

How to store and freeze cookies?

  • For storage: Leftover biscuits can be kept covered for up to 3 days at room temperature. If you want to keep it longer, keep it in the refrigerator. They can be stored for up to 2 weeks.

  • Freezing: place the biscuits in a zippered bag and store them in the freezer for up to 6 months.

Preheat oven to 180 ° C. Cover a large baking sheet with parchment paper and set aside.
