
If you can’t handle gluten or are just saying clear from it, then you know the thing you miss the most are the sweets, especially the delicious cookies. Most cookies, and I mean almost all of them, are made with wheat flour or some type of grain with gluten.
Let’s make ourselves a batch of gluten-free cookies, how? We’re using almond flour. Let me tell you, if you haven’t cooked with almond flour before, you’ll love it, especially when it’s ground real fine; it’s like real flour, but it’s gluten free, and it’s healthier too.
Looking for a protein-packed snack? Well, look no more because these cookies are practically pure almonds, which means lots of proteins and nutrients.
We’re making around ten cookies, so we’ll need one whole cup of almond flour, again, finely ground. We also need some granulated sugar, a pinch of baking powder, and another one of salt. That’s easy, isn’t it?
Five ingredients, and you’ve got yourself a batch of gluten-free almond flour cookies. Now, you’ll also need a baking tray, a cooling rack, and a mixing bowl.
Make sure you add the water to the flour mixture slowly; you might not need all of it, or you might need a little more; that depends on the almond flour you find. What you want is a consistent dough that’s not too runny. It won’t get sticky or anything, but you’ll know when it’s ready. Scoop your cookies with a spoon and place them on the baking tray.
Make your cookies more exciting with chocolate chips or throw in a few crushed almonds or walnuts; they give the cookies a lovely texture and a crunch.

Preheat your oven to 350°F.
Line a baking tray with parchment paper and reserve.
In a mixing bowl, sift the almond flour, combine it with the sugar, add the baking powder and the salt. Mix well.
Slowly pour in the water until a dough forms.
With a spoon, scoop out ten regular-sized balls and place them in the baking tray with nice spacing between them.
Bake for around 15 minutes or until golden and crispy on the edges.
Remove from the oven and let your cookies cool down in a rack before enjoying.
